You Can Activate Hard/Nightmare Mode by pressing N, in this Mode, you won't find
the fasters, normal, and protected ones, only the nightmare variation.

The Fast and Nightmare Zombies get fasters or stronger as your score or the times that they spawned, which makes the game harder
